Recipe | Bone Broth for Fasting

Ingredients:

Bones, from animal source such as chicken, beef or pork
3-4 celery pieces, chopped
5 carrots, chopped
1 onion, chopped (you can include the skin too)
Salt, to taste
1 tsp black pepper
A pinch each of rosemary, thyme,  sage, oregano (any herbs you like can be added)
1-2 bay leaves
Water (enough to cover the bones during simmer)

Tools:

Heat source
Stockpot or Dutch Oven with a lid
Stirring tool
Cutting board
Knife
Measuring utensils
Fine mesh strainer
Storage container like mason jars

Instructions:

Rinse veggies, cut off the ends then chop each into 3-5 pieces.
Add all above ingredients to stockpot and cover with water.
Heat to boiling, then reduce to simmer while covered for minimum of 2 hours.
Turn off heat, add salt to taste.
Pour thru fine mesh strainer into mason jar. Caution with hot liquid.
Serve warm or freeze.

Tips:

If you are using this broth for a fast, ensure you have removed as much meat
and fat from the bones as best you can. Those added calories can prevent you from
getting the full benefits of your fast.

The longer you let this broth simmer, the more marrow you will get from the bones.

If you wanted to, you can put everything in a crockpot on low for 8-12 hours.
Or if you have a woodstove, you can leave the pot on all day to simmer. Just be sure to check it occasionally to ensure there's still enough water to cover the bones.
